Recipe: Lavender chocolate and dates torte

Okay, fine! So, I'm branching out!

Here's a recipe of a lovely dates and chocolate torte, which i love. I have beautiful childhood memories of monopolising an entire box that had home-made date torte except that it had a lot of almonds and pistachios. 

This recipe is by Dr Soundararajan P, corporate executive chef at Mahindra Holidays & Resorts.

Lavender chocolate and dates torte
(A lavender-flavored dense cake made with chocolate, dates and cashew nuts)

Dried dates: 100gm
Cashew nuts: 100gm
Milk chocolate: 200gm
Egg white: ½ no
Lavender essence: Few drops
Sugar: 1 tsp

Chop dried dates, cashew nuts, milk chocolate to the size of a brunoise 
Beat the egg white with sugar to the foam consistency 
Mix all chopped ingredients along with beaten egg white and add lavender essence 
Pour in the mould or baking tray, which is already greased 
Bake for 15 to 20 minutes at 160 degree C
Serve warm with your choice of garnish
