Here's a recipe of a lovely dates and chocolate torte, which i love. I have beautiful childhood memories of monopolising an entire box that had home-made date torte except that it had a lot of almonds and pistachios.
This recipe is by Dr Soundararajan P, corporate executive chef at Mahindra Holidays & Resorts.
Lavender chocolate and dates torte
(A lavender-flavored dense cake made with chocolate, dates and cashew nuts)
Dried dates: 100gm
Cashew nuts: 100gm
Milk chocolate: 200gm
Egg white: ½ no
Lavender essence: Few drops
Sugar: 1 tsp
Method
• Chop dried dates, cashew nuts, milk chocolate to the size of a brunoise
• Beat the egg white with sugar to the foam consistency
• Mix all chopped ingredients along with beaten egg white and add lavender essence
• Pour in the mould or baking tray, which is already greased
• Bake for 15 to 20 minutes at 160 degree C
• Serve warm with your choice of garnish
